Gather up your Sunday Brunch Squad. We’ve curated a list of our favorite fizzy cocktails, featuring three different types of bubbly: Champagne, Prosecco and Cava.

Champagne

French 75

(source: Bon Appétit) A chic French cocktail with a vintage vibe, this classic will take any basic brunch to the next level. Ingredients: (Makes 1 serving) 2 ounces London dry gin ¾ ounce fresh lemon juice ¾ ounce simple syrup 2 ounces Champagne Long spiral lemon twist (for garnish)
Instructions: Combine gin, lemon juice and simple syrup in a cocktail shaker. Fill the shaker with ice, cover and shake vigorously for approximately 20 seconds. Strain the cocktail into a large flute. Top with Champagne. Garnish with a lemon twist. Enjoy!

Lavender Champagne

(source: Martha Stewart) This pretty sipper will make all your Champagne and caviar (or eggs benny) dreams come true.

Ingredients: (Makes 4 servings)

½ cup sugar

½ cup water

1 tbs dried lavender

1 bottle of dry Champagne Fresh lavender sprigs for garnish

Instructions:

Create simple syrup by bringing the sugar and water to a boil in a saucepan, stirring until all of the sugar is dissolved. Stir in the dried lavender. Remove mixture from heat. Let this simple syrup cool completely. Strain out lavender. Refrigerate syrup until ready to serve. Note: you will have extra! The simple syrup lasts up to 1 month when refrigerated. Pour 6 ounces of Champagne and 1 ½ teaspoons of the lavender syrup into each flute. Garnish with a lavender sprig. Cheers!

Prosecco

Raspberry Prosecco Bellini (source: BBC Good Food) A simple, red raspberry take on everyone’s favorite peach pour.

Ingredients: (Makes 1 serving)

1 part Raspberry liqueur

4 parts Prosecco Fresh basil sprigs

Instructions: Pour one part Raspberry liqueur into a champagne flute. Add one sprig of fresh basil. Top with four parts Prosecco. Happy sipping!

French 77

(source: BBC Good Food) Does the name ring any bells? Try this cocktail for an Italian spin on the French classic.

Ingredients: (Makes 1 serving)

1 part elderflower cordial

1 part lemon juice

1 part gin

Prosecco Long spiral lemon twist (for garnish)

Mint leaves (for garnish)

Instructions: Pour one part elderflower cordial, one part lemon juice and one part gin in a cocktail shaker with ice. Shake until well combined. Strain into a tall glass. Top with Prosecco and serve with a twist of lemon and mint leaves. Enjoy!

Cava

Ruby Red Sparkler (source: The Latin Kitchen) With splashes of ginger and grapefruit juice, this spritzy brunch bevvy is practically healthy! (Ok, maybe not, but a girl can dream.)

Ingredients: (Makes 1 serving)

½ ounce ginger simple syrup

2 ounces ruby grapefruit juice

5 ounces Cava

Instructions: Mix ½ ounces of ginger simple syrup with 2 ounces of ruby red grapefruit juice. Pour the mixture into an ice cube mold and freeze. When the ice cubes are ready, take 1-2 cubes out of the mold and place them in a glass. Pour 5 ounces of Cava into the glass. As the ice cube melts, it will infuse the Cava with ginger and grapefruit. Cheers!

Bubbly Mary

(source: Supercall) This refreshing aperitif breathes bubbly life into the steadfast brunch staple.

Ingredients: (Makes 1 serving)

¾ ounce vodka

3 dashes Cecil & Merl Cucumber Bitters

2 ounces Clamato Picante

2 ounces Cava Long spiral lemon twist (for garnish)

Instructions: Combine the vodka, Clamato Picante and Cecil & Merl Cucumber Bitters in a Champagne flute. Top with Cava and garnish with a lemon twist. Enjoy!
